Rice Bubble Rose Window
Breakfast will never be the same. It's unbelievable what you can create with cereal. The Cathedral was recently contacted by Kaiapoi Chef Aaron CampbelI (of enormous Rugby World Cup pavlova and iced Cathedral fame) who came up with the idea, a little over 12 months ago, of making a "Rose Window" from cake. He wrote:
"One of the stumbling blocks was realising how beautifully detailed the Window is (was) and to try and be able to give respectful tribute.
I began the base construction in May, "playing" with it here and there. Sometimes leaving it for a while either because work was busy and I didnt have time or for some other reason. I am close to completion the 10 small red pieces (outer ring) are last and will go in when it is finally assembled. The gaps can be filled in with more icing to make the window 'whole'."
The 'Window' is 3 metres in diameter, made with ten outer windows and one central piece. It is mounted on MDF and contains 25kg of rice bubbles, 20kg of marshmallow, egg whites, icing sugar and fondant icing.
"I wanted to make it technically a "cake" from edible ingredients" says Aaron. " I spent a long time trying to get colour matches with the windows but food colourings are on a very different palate. So I decided to use acrylics- no one will be eating it anyway. Despite the ingredients it is relatively non perishable. My dilemma at the moment is finding a display space to show it. I would like to show it in Christchurch first because of the connection with the city and residents as you know there are few places available."
